homemade pasta sauce

Creating a hearty homemade pasta sauce begins with gathering the ingredients, each contributing to the final flavor and texture of the dish. The foundation often lies in a few core components, including onions, beefsteak tomatoes and garlic. Onions add a subtle sweetness and depth of flavor, while fresh beefsteak tomatoes provide a robust base that enhances the sauce’s richness. Garlic, with its aromatic properties, infuses the sauce with a savory depth that is irresistible.

In addition to these fresh items, dried herbs and spices play a critical role in defining the flavor of the meat sauce. Herbs such as basil, oregano and marjoram are traditional choices that complement the natural sweetness of the tomatoes and balance the savory elements of the meat.

When determining the type of meat to include, I always prefer beef short ribs or chuck steak due to their rich flavor and tenderness when cooked slowly. In addition, homemade meatballs are used to add flavor.

Step by Step Cooking Guide

The foundation this sauce starts with, chopped onions, beef steak tomatoes, minced garlic and other leafy spices, boiled until the mixture is softened and ready to puree.

Utilize a food mill to separate the seeds and skins from the puree. The food mill is particularly efficient at producing a smooth sauce while discarding unwanted parts.

Return the puree to the pot. Add tomato paste to enrich the sauce, followed by dry wine, chuck steak, salt and pepper to taste. Stir well to ensure even distribution of the ingredients. Allow the mixture to come to a gentle boil.

Once boiling, reduce the heat to low and let the sauce simmer for at least 1 to 1 1/2 hours. This simmering process is crucial, as it allows time for the flavors to meld together beautifully, resulting in a rich and savory finished product. Regularly check and stir, preventing the sauce from sticking to the bottom. Resist the urge to serve immediately. Instead, let it chill in the refrigerator overnight. This step allows the herbs and tomatoes to fully meld and develop a much deeper, richer profile.

Final Touches

On the second day, start reheating the sauce 4 hours before the dinner. This is the perfect time to drop in the frozen homemade meatballs and let them simmer slowly.

Once the hearty homemade pasta sauce has simmered to perfection, the final touches are essential to enhance its flavor profile. One key ingredient to consider adding is balsamic vinegar. This ingredient contributes an additional layer of depth that balances the richness of the sauce. Start by drizzling about one tablespoon of balsamic vinegar into the sauce during the last few minutes of cooking. This step not only enriches the overall taste but also elevates the sauce’s aroma, making it even more irresistible.

This versatile sauce is the perfect companion for any pasta night; whether you’re swirling it into classic spaghetti and linguine or layering it between sheets of lasagna. Its deep, slow-simmered flavor also makes it an incredible base for more creative dishes, like hearty chicken zucchini roll-ups or a gooey, comforting one-pan pizza bake.

Notes

  1. Chuck steak is a fantastic budget-friendly choice, but beef short ribs are the ultimate upgrade. Their higher fat content melts into the sauce, creating a rich, unbeatable depth of flavor.
  2. Stick with homemade meatballs for the best texture and flavor; store-bought versions often contain fillers and additives. Just be sure not to overcook them, or they’ll lose their bite and become mushy in the sauce.
