Crispy Buffalo Pierogies: The Recipe That Started It All
As I mentioned in our potato and shiitake mushroom pierogi post, this whole pierogi journey actually started with the buffalo pierogi. This restaurant appetizer is what got us curious about making pierogi at home in the first place — so of course, once we felt comfortable with the dough and folding technique, buffalo was the very first flavor we had to try.
It turns out this one is incredibly simple. Once you have a batch of pierogi made (or a bag of them in the freezer), the whole thing comes together with just an air fryer and a bottle of buffalo sauce. And using the air fryer instead of deep frying cuts the calories down significantly, without losing any of that crispy edge that makes buffalo-style food so satisfying. The best part is that the flavor is entirely up to you — swap in your favorite hot sauce, a milder buffalo blend, or something with extra kick, and make it exactly the way your family likes it.
The Step-by-Step Cooking Guide
Arrange the Pierogi
Line the air fryer basket with parchment paper and arrange the frozen pierogi in a single layer, making sure they don’t overlap. The parchment paper keeps the pierogi from sticking to the basket, and giving them their own space in a single layer is what lets hot air circulate evenly around each one — crowd the basket, and you’ll end up with pierogi that steam instead of crisp.
Spray with Olive Oil
Lightly spray the pierogi with olive oil spray. This is the step that gives you that golden, crispy exterior without deep frying. A light coating is really all you need — the air fryer does the rest of the work.
Air Fry Until Crispy
Air fry at 400°F for 12 minutes, flipping the pierogi halfway through to crisp both sides evenly. The high heat is what creates that satisfying crunch, while flipping halfway through makes sure both sides get equal exposure to the hot air instead of just the top.

Toss in Buffalo Sauce
In a large mixing bowl, add ½ cup of buffalo sauce. Add the crispy pierogi to the bowl and toss until evenly coated. Tossing the pierogi in sauce after they’re crispy, rather than before cooking, is what keeps that crunch intact — the sauce coats the outside without soaking into the pierogi and making it soggy.
Serve with Extra Sauce
Transfer the buffalo pierogi to a serving plate. Serve immediately with extra buffalo sauce on the side for dipping. This gives everyone the chance to add as much heat as they want, without committing the whole batch to one spice level.
This one is proof that homemade pierogi don’t have to be complicated to be great. A few pantry staples, an air fryer, and your favorite sauce is really all it takes to bring that restaurant appetizer home — lighter, and made exactly the way you like it.
