Ingredients
  

  • 2 large eggs
  • 1 3/4 cup almond milk
  • 1/2 cup canola oil
  • 1/2 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 2 cups all purpose flour
  • 4 tsp baking powder
  • 1/4 tsp pink salt
  • 1 batch Almond-Maple Spiced Blueberry Sauce
  • olive oil for greasing

  • 1 electric mixer
  • 1 7 inch waffle maker

Method
 

  1. Add 2 eggs in a mixing bowl. Use an electric mixer to beat 2 eggs until fluffy.

  2. Incorporate 1¾ cups almond milk, 1/2 cup canola oil, 1/2 tablespoons maple syrup and 1/2 teaspoons vanilla extract. Mix until well combined.

  3. Add 2 cups flour, 4 teaspoons baking powder, ¼ teaspoon pink salt. Mix until combined, then let the batter rest for a few minutes to ensure smooth consistency

  4. Preheat waffle maker
  5. Brush olive oil lightly over waffle iron.

  6. Ladle 3/4 cup of batter into the waffle maker. Let the waffles cook for 3-5 minutes until the steam begins to subside.
  7. Place the waffle(s) on a plate and top with the almond-maple spiced blueberry sauce. Serve and enjoy!
