Ingredients
  

  • 1 cup water
  • 2 cups blueberries
  • 1/4 tsp monkfruit extract
  • 1 tbsp maple syrup
  • 1/2 tsp almond extract
  • 1/8 tsp ground ceylon cinnamon
Corn Starch Slurry
  • 1/4 cup water
  • 3 tbsp cornstarch

Method
 

  1. Combine 1 cup water, 2 cups blueberries. 1/4 teaspoon monkfruit extract, 1 tablespoon maple syrup in a sauce pan. (See notes)

  2. Bring the sauce mixture to a boil over medium-high heat. Reduce heat to simmer
  3. Dissolve 3 tablespoon cornstarch in ¼ cup water.

  4. Slowly incorporate the cornstarch slurry into the simmering liquid while whisking continuously.
  5. Continue to stir and simmer until the sauce is thick enough to coat a spoon.
  6. Once the sauce reaches the desired consistency, remove from the heat and mix the sauce with ½ teaspoon of almond extract and ⅛ teaspoon Ceylon cinnamon.
