A rich, deeply savory beef chili built on an unexpected trio — stout beer, brewed coffee, and a touch of cocoa powder. Simmered low and slow with just tomatoes and kidney beans, it's simpler than your average chili but never short on flavor. Perfect on its own, over a baked potato, or piled high on chili nachos.

Ingredients
  

  • 2 red chili peppers
  • 3 beefsteak tomatoes
  • 2 lbs 90% lean ground beef
  • 2 tbsp onion powder
  • 1 tsp garlic powder
  • tbsp chili powder
  • 2 tsp ground cumin
  • 1 tbsp unsweetened cocoa powder
  • 1 tsp dried oregano
  • 1 tsp ground coriander
  • 1 tsp pink salt
  • 1 can (12 oz) stout beer
  • 1 cup strong medium roast coffee
  • 14 oz tomato paste
  • 14.5 oz beef broth
  • 2 tbsp maple syrup
  • 1/16 tsp monk fruit extract
  • ¼ tsp cayenne pepper
  • 2 cans (15oz each) kidney beans

Method
 

  1. Seed and dice 2 red chili peppers; set aside.

  3. In a large soup pot, brown 2 lbs 90% lean ground beef until fully cooked.

  4. Add 2 tbsp onion powder, 1 tsp garlic powder, 3½ tbsp chili powder, 2 tsp ground cumin, 1 tbsp unsweetened cocoa powder, 1 tsp dried oregano, 1 tsp ground coriander, and 1 tsp pink salt; stir to combine with the beef.

  5. Pour in 1 can (12 oz) stout beer and 1 cup strong medium roast coffee. Add 14 oz tomato paste, 14.5 oz beef broth, 2 tbsp maple syrup, 1/16 tsp monk fruit extract, ¼ tsp cayenne pepper, 2 cans (15 oz each) kidney beans, the diced chili peppers, and the diced tomatoes; stir to combine.

  6. Let the chili simmer for 45 minutes, or until the flavor is fully developed.

Notes

  • This chili works great as a main dish on its own and freezes well for leftovers.
