Ingredients
  

Prepare Zucchini
  • 2-3 Zucchini (1 lb)
  • 1/4 tsp pink salt
Homemade Seasoned Breadcrumbs
  • 1/2 cup plain panko breadcrumbs
  • 1/2 tbsp Italian Seasoning
  • 1/4 tsp pink salt
  • 1 tbsp avocado oil
Assemble Zucchini Tots
  • 1/2 cup grated 2% milk cheddar cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 tsp pink salt
  • 1/4 tsp ground black pepper
  • 1/2 tsp dried dill
  • 1/2 tsp garlic powder
  • 1 egg

Equipment

  • 1 Air Fryer
  • Parchment Paper
  • 1 Cheese Cloth
  • 1 Veggie Spiralizer

Method
 

  1. Wash and spiralize the zucchini into short strings (See Notes 1)
    2-3 Zucchini (1 lb)
  2. Put Zucchinis in a bowl and add 1/4 tsp of salt and toss. Let zucchini rest for 15 mins.

  3. Meanwhile, add 1/2 cup breadcrumbs, 1/2 tbsp Italian seasoning, 1/4 tsp pink salt and 1 tbsp avocado oil in a large bowl and combine.

  4. Use cheese cloth to squeeze the water out of zucchinis as much as possible. Then add the zucchinis to the seasoned breadcrumbs
  5. Add 1/2 cup grated 2% milk cheddar cheese, 1/4 cup grated parmesan cheese, 1/2 tsp pink salt, 1/4 tsp ground black pepper, 1/2 tsp dried dill, 1/2 tsp garlic powder and 1 egg into the zucchini breadcrumb mixture. Combine well.
    1/2 cup grated 2% milk cheddar cheese, 1/4 cup grated parmesan cheese, 1/4 tsp pink salt, 1/4 tsp ground black pepper, 1/2 tsp dried dill, 1/2 tsp garlic powder, 1 egg
  6. Scoop out 2 tsp full of mixture to form a zucchini tot. Repeat with the rest of the zucchini breadcrumb mixture
  7. Lay parchment paper in the air fryer to cover the bottom, then add the zucchini tots into the air fryer. Cook the tots at 390℉ for 10 mins and flip for another 5 mins.

Notes

  1. No spiralizer? Just use the coarse side of a box grater to make zucchini noodles.
  2. Each air fryer performs slightly different. If the tots are lightly browned after 10 minutes, give them another 2-3 minutes before flipping them.
