My first encounter with loaded baked potatoes occurred shortly after I came to the US in my twenties. I vividly remember the excitement of exploring new culinary experiences in a country renowned for its diverse food culture. Amongst these experiences, my introduction to the loaded baked potato at Wendy’s stands out as a defining moment. This simple yet indulgent dish, topped generously with sour cream, chives and shredded cheese, quickly became a cherished favorite. It was not merely the combination of flavors that captured my heart, but the association it held with my journey of adaptation to a new environment.
As the years went by, I found myself gravitating away from fast food. Although I still cherished those baked potatoes from Wendy’s, I yearned for a version made with fresh ingredients and tailored to my palate. This yearning ignited a passion for cooking and prompted to experiment with recreating the loaded baked potato experience at home.
The Step-by-Step Cooking Guide

Thoroughly wash the potatoes and pat dry with a kitchen towel or paper towel.
Preheat the oven to 300°F. Then rub a light coat of avocado oil over the skin, and sprinkle with salt for added flavor.
Pierce the potato several times with a fork; this allows steam to escape during the cooking process, preventing the potato from bursting.
Place the prepared potato on a baking sheet lined with foil for easier cleanup. Bake the potato for 2 hours. You will know it is done when a toothpick easily penetrates the flesh

Now, it’s time to load it with your favorite toppings. Slice the potato open lengthwise and fill it with staples like butter, sour cream, shredded cheese and bacon pieces, or customize it with various toppings to suit your taste.

- Preheat oven to 300℉
- Wash the potato and pat dry.1 medium size Russet potato
- Use hand to rub the 1/4 tsp pink salt and 1 tsp avocado oil over the potato.1/4 tsp pink salt, 1 tsp avocado oil

- Use fork to gently pierce the skin.
- Bake the potato in the baking pan for 2 hours.

- Slice the potato in half and coat the flesh with 1 tbsp of butter.1 tbsp plant based butter
- Serve the potato with 2 tbsp of cheddar cheese, 1 tbsp sour cream on top, and sprinkle 1 tbsp bacon pieces.2 tbsp 2% milk cheddar cheese, 1 tbsp light sour cream, 1 tbsp bacon pieces (see notes 1)
