A loaded baked potato is the ultimate comfort food, featuring a fluffy, oven-roasted interior encased in a crisp, salty skin. Ingredients
  

  • 1 medium size Russet potato
  • 1/4 tsp pink salt
  • 1 tsp avocado oil
  • 1 tbsp plant based butter
  • 2 tbsp 2% milk cheddar cheese
  • 1 tbsp light sour cream
  • 1 tbsp bacon pieces (see notes 1)

Method
 

  1. Preheat oven to 300℉
  2. Wash the potato and pat dry.

  3. Use hand to rub the 1/4 tsp pink salt and 1 tsp avocado oil over the potato.

  4. Use fork to gently pierce the skin.
  5. Bake the potato in the baking pan for 2 hours.

  6. Slice the potato in half and coat the flesh with 1 tbsp of butter.

  7. Serve the potato with 2 tbsp of cheddar cheese, 1 tbsp sour cream on top, and sprinkle 1 tbsp bacon pieces.

Notes

There is no doubt that freshly cooked bacon is the best. But you will be surprised how close the taste of store bought bacon pieces compare to the freshly made one. Many times I have used these store bought bacon pieces (find the ones without additives); mainly because they are convenient and I avoid all the cleaning afterwards.
