Golden Cinnamon Brioche French Toast
Some mornings, eggs and toast just don’t cut it. I found myself wanting something that felt a little more special without demanding a lot more effort, and French toast kept coming to mind — it has that fancier, more flavorful quality that turns a plain breakfast into something worth waking up for. Rich brioche soaks up a warm cinnamon-maple batter and fries into golden, custardy slices that taste indulgent even though the ingredient list stays simple. What I love most is how flexible it is: serve it as the star of the plate on its own, or slide it alongside a couple of eggs for a breakfast spread that feels complete. Either way, it’s proof that stepping outside the usual toast rotation doesn’t have to mean more work — just a little more flavor.
The Step-by-Step Cooking Guide
Beat the eggs in a flat baking dish — this makes dipping the bread much easier later. Melt the butter, then whisk it into the eggs along with the almond milk, vanilla extract, cinnamon, nutmeg, and maple syrup until fully combined.
Warm a non-stick skillet over medium to medium-high heat. Drizzle in avocado oil and use a brush to coat the surface evenly.
Dip each brioche slice into the batter, coating both sides quickly — brioche soaks up liquid fast, so don’t let it linger or it’ll turn soggy. Place it in the hot skillet and fry until golden brown, then flip and fry the other side the same way.

Continue dipping and frying the remaining brioche slices, adding a little more oil to the skillet between batches as needed.
Stack the French toast and serve warm with maple syrup.
