Italian Style Chicken Sausage Patties
In my mind, sausage was always one of those things you simply could not make at home. Don’t ask me why. Maybe it was because of that highly specific, deeply savory flavor profile, or that dense, juicy texture that feels like it requires industrial machinery to achieve. It felt like a food shrouded in mystery, reserved strictly for professional butcher shops or factory production lines.
That all changed while I was watching an old Seinfeld episode. Kramer and Newman turn Jerry’s apartment into a full-blown sausage-making operation, complete with a hand-cranked stuffer and upbeat music. It was hilarious, but it also planted a stubborn seed of curiosity in my brain. It made me wonder: Wait, can I actually make this at home?
I went down a research rabbit hole that night. To my absolute surprise, I stripped away the complex casings and heavy machinery to discover a simple truth. At its core, sausage is no more than ground meat mixed with a precise blend of spices and herbs.
That realization was the spark that got me going, especially when I figured out that sausage patties are even simpler to make than traditional links. There is absolutely no need to deal with the skin, casing, or any complicated stuffing gadgets. You just mix it, shape it and throw it in a pan. By using ground chicken as my base, I realized I could skip the heavy pork, control every single ingredient, and enjoy freshly made, lean sausage patties right in my own kitchen whenever the craving hits.
The Step by Step Cooking Guide
Grab a large mixing bowl and add ground chicken along with avocado oil. Next, dump in your spice blend: dried parsley, ground fennel, garlic powder, onion powder, pink salt, ground black pepper, smoked paprika, dried basil flakes, oregano and marjoram.

Use your hands or a sturdy spatula to mix everything together thoroughly. You want to make sure those aromatic spices and herbs are completely and evenly distributed throughout the meat so every single bite is packed with flavor.

To keep your patties uniform so they cook at the exact same rate, use a 1/4 cup measuring cup to scoop out the mixture. This will yield 8 perfect portions.
Place a heavy cast-iron skillet or a non-stick pan over medium to medium-high heat. Drizzle in avocado oil. Give it a minute or two to heat up. You will know it is ready to go when the oil starts shimmering slightly across the surface of the pan.
Carefully place four chicken patties into the hot skillet. Working in batches of four is essential here – if you crowd the pan, the sausages will steam instead of sear, and you will miss out on that beautiful crust.
Transfer your first batch of beautifully seared patties to a warm plate. Add the remaining avocado oil to the skillet, let it heat up for a few seconds, and repeat the process with your final four patties. Serve them hot straight out of the pan!
